I have been neglectful

My poor blog, I was afraid this would happen. Life has prevented me from updating this blog all week. I am still trying to figure out what to do with my corner of the internet. I have delusions of grandeur with multiple people following what I write but alas, that won't happen unless I have something to say.

Jared and I have been trying to save money and cooking more at home. I suppose I can keep track of the recipes I use to cook for us. I am trying to eat more 'whole' food and make more things from scratch for us. I make all of Madison's (our daughters) baby food. However, Madison seems to think she is a very big girl and ate most of my minestrone soup tonight! The soup came out well, I think I over did it with the salt. The egg noodles were a big fail, they dissolved into a mush that worked out well because it thickened the soup nicely.

Minestrone soup (adapted from the fix it and forget it cookbook)
1 bunch of celery
1 28 oz can diced tomatos
2 potatoes sliced thin
2 large carrots sliced thin
3 cloves garlic minced
2 cans beef broth
1 can pinto beans
1/2 package egg noodles
oregano
salt to taste

combine in crock pot, cook high 6 hours. I would probably add more vegetables next time- I forgot to put in onions so there would be one. Zucchini or summer squash chopped thick would probably work as would mushrooms. I cant say I would mind more tomatoes either. Jared really liked it as did Madison!
